This only takes about 15 minutes to make so its great for a hearty weeknight meal.
Ingredients:
4-4oz pork chops trimmed of fat and pounded thin
2 tsp lemon pepper (regular pepper can be used instead)
1/2 cup balsalmic vinegar
1/2 cup chicken or vegetable broth
cooking spray
Directions:
Heat skillet coated with cooking spray to medium heat
Sprinkle pork chops with pepper on both sides
Place pork chops in skillet and cook until brown (about 3-5 minutes on each side)
Remove pork chops from skillet
Pour vinegar and broth into skillet and scrape brown bits from the bottom
Cook about 5 minutes until liquid has reduced into a thin sauce
Place pork chops back in skillet and coat with sauce
I usually serve this with mashed potatoes, rolls, and a vegetable. Its a delicious and incredibly easy meal for limited time during the work week.
