I was really craving Chinese food so steamed pot stickers and chicken fried rice sounded good. --1 PP each--
Ingredients:
8 oz ground skinless chicken breast
1 cup napa cabbage, chopped
1 scallion, chopped
1/2 Tbs low sodium soy sauce
1 tsp cornstarch (disolved in 2 Tbs water)
sprinkle dry mustard (about 1/4 tsp)--optional
pinch ground pepper (about 1/8 tsp)
20 wonton wrappers
1 cup fat free reduced sodium chicken broth
Directions:
Combine chicken, cabbage, soy sauce, disolved corn starch, mustard (optional), and pepper
Fill 20 wonton wrappers with chicken mixture:
Have bowl of water on side
Place chicken mixture in center of wonton wrapper
Wet 2 adjoining sides of wonton wrapper with water
Press dry sides to wet forming a triangle
Spray skillet with cooking spray and heat on medium
Brown wontons on both sides (may have to add more cooking spray)
Arrange wontons in skillet so that they are barely touching (this will prevent sticking)
Pour chicken broth over wontons and cover
Cook about 5 minutes then place lid at an angle to vent steam
Continue cooking until all chicken broth is evaporated and wonton skins are soft
Serve with soy sauce
